Today they’ve become my way of eating and the style I use in my vegetarian restaurant. The preparation can be labor-intensive due to the mix of spices used, but the results are well worth it. India has historically been known as the ‘land of spices’ and is the largest producer of spices in the world. The country produces over 70% of the world’s spices and is home to a greater variety of spices than any other country in the world.
